This Chardonnay is bright yellow straw-like in colour, with tints of green. On the nose one can sense notes of tropical fruits, tea, vanilla and dry aromatic herbs such as camomile, completed with something like honey and orange peel. To taste is has a fresh and oily style at the same time; you taste notes of dried fruit such as hazelnuts and pine kernels. Long, profound and elegant.

Food Matching: Enjoy chilled on it's own or with a variety of chicken, seafood and roast vegetable dishes.

Viticulture & Winemaking: The grapes were kept in a refrigerated chamber for 20 hours to lower their temperature before being processed. The process for the clusters consisted of a selection stage firstly of the bunches and then again of the grapes after separating the grapes from the stalks. In this way the grapes went through a very thorough selection process allowing only the grapes in perfect condition to be processed. Once the press was filled the pressing process began and the juice was collected in a cold tank, which was protected with carbon dioxide to avoid oxidation of the grape juice. After a stage of decantation, the cloudiness of the juice was adjusted to 250 NTU before raising the temperature to 16°C to begin the alcoholic fermentation. When the grape juice had reached a density of 1030°, 50% was transferred to French barrels of 228 and 400 litres, to finish the fermentation in these. From these barrels 22% were new, the rest of one, two or three years usage. The other 50% of the juice continued to ferment in the stainless steel tank at low temperatures (13-14°C) for 15 days.

Once the alcoholic fermentation was finished, the wine in barrels was submitted to a weekly push down and the wine in the steel tanks also went under mixing of its sediments, looking to give more of an oily texture to the wine. The wine did not go through malolactic fermentation; sulphate was added in small doses during the stage of mixing the sediments which lasted for 4 months. Finally the wine was kept still for 9 months in wood to age.

After blending, the wine is put through a process of stabilization in cold conditions and finally softly filtered before bottling.
