Grape Variety: 100% Xarel.lo
Tasting Notes: 9+ years in contact with the lees; the ageing process is long and painstaking, producing the subtlest and most complex nuances of the expression of land and time. Turó d’en Mota represents the elegance of simplicity. It is a terroir cava in the broadest sense; in other words, the expression of an area of very calcareous land with a Mediterranean microclimate, xarel·lo grapes and a viticulture of observation rather than intervention. A joyful but deep wine, virtuous and gentle. Food recommendations would be: rice-based dishes such as risottos, paellas or poultry (roasted chickenor duck) and fish and shellfish. It will stand up to complex dishes and fine sauces.

Harvest Method: Hand-picked
Winemaking: The must is fermented in oak barrels. Vinification, production and ageing are carried out entirely in Recaredo’s cellars. The second fermentation and the ageing in bottle in contact with the "lees" is done exclusively with a natural cork. Cork is sustainable, recyclable and ideal for retaining the original sense of a long-aged Cava. The final clarification is done by hand in the racks. The uncorking process (Disgorgement) is done by hand without freezing the bottle neck, handcrafted professionalism and respect for the environment. It is a Brut Nature Cava, completely dry without addition of sugar. The date of uncorking (Disgorgement) and the months of ageing on the lees are shown on the back label.
