Caelum

The philosophy of Bodega Caelum is that maintaining utmost care for the vines is the best way to achieve desired results in their wines. This is all overseen and coordinated by Agronomist, Mercedes Díaz, and Winemaker, Giuseppe Franceschini who work together to obtain the best quality from the grapes. The vineyard’s "espaldero" training system ensures the vines are fully secured from hail with a protective mesh. The vines are watered with drip irrigation to control and optimise the use of water, their most valuable resource.
